It's completely linear too.
If for example a worker with 1 skill produces 10 logs a day, a worker with 2 skill will produce 20, with 3 skill 30 and so on.
Easy to see by switching a worker with a different skill level to a job, because in the assignment screen (where you set the %) it'll also show you how much they'll produce with their current skill level.
When you switch villager jobs to a different category (Production -> Extraction) mid-season, they will take a mood hit. The exception is if the switch is say from Farm Shed -> Barn. (ie Farming -> Farming. (Same goes for Production-> Production, et al)
Doing so between seasons the hit is smaller. You can ameliorate the mood hit by decorating their house. (Inside and out)
So it totally depends on how their skills are.
The "hit" you talk about, is only when you switch them to a job they are worse at and only temporarily to bring their mood to the level it's supposed to be now with the new job/skill level.
If you switch them back, it'll go back up to the previous level.
And since they'll level up their skill over time anyway, it won't matter in the long run.
Having decorations in their house (capped at 10) is one of the other things that will also impact their mood.
