Why not? I mean there are plenty of boats back then. Traveling down rivers for trade or fishing.
I think that many players would love it.

Players would also like flying kites, building sand castles, being able to walk on their hands, and all other sorts of fluff that has no meaningful impact on the game. But generally speaking, I am aware that you are an exception, they want the time and resources that it would take to make something like that to be spent on making things that actually expands the gameplay.

Sandcastles would be a great addition to the game.

Some people made boats out of wooden planks and spears just for decoration in the water - and you also can construct medieval castles though there is no ready preset, so you have to combine some buildings as a castle - but not sandcastles, but maybe castles out of pebblestone ;)
