Maybe you make 2 because with that material you can make 2 instead of 1? So why wouldn't you make 2 if you can? They wear down with use, so it's nice to have a backup.
But I'll double check with the devs if the 2x is a typo or if it's intended.
Absolutely uncommon in reality.
The question now is: where in the middle between Hollywood and reality does MD lie?
Not just a Hollywood thing. There's historical evidence of dual-wielding IRL, though it was definitely uncommon on the battlefield.
Dual wielding was typically with a dagger or dirk in the off-hand along with a rapier or other side sword in a duel.
A shield's better in battle but is unwieldy in a city, so the dagger/buckler replaces a shield in those cases.
But how could this be added to the game?
Maybe similar to Minecraft's Thorns-Enchantment?
Reflecting parts of recived damage back to the attacker?
All weapons already have a block value, and shields already have a damage value, so it would just be a checkbox and a visual change.

It could have a higher attack-value than a shield, but still a lower block-value to make sense.
So in the end, you'd just nerf yourself by blocking with the weapon and attacking with the dagger.
Blocking with a shield and then attacking with your weapon is better in every way.
There has to be some bonus to the dagger,
like the shield's punch-ability. It's not about the damage, but about the
short stun/knockback effect, in this case.
Stacking the dagger's values on top of the weapon's could be a thing, imo.
So there's no block-attack like with the shield,
but only attack or block with better values.

Meaning just a better combined damage-value, actually.
A better block-value than using a shield would be pointless.
Surely there's no absolute need for this.
But since it isn't just Hollywood, it's a nice suggestion for a future update!
So why not collecting ideas for it?
Frankly hope the devs don't open the door to becoming even more combat oriented as the continual nagging once a more nuanced combat system is employed will be unending, as you can see it is already starting and even with upgrades to bandits combat is still rudimentary at best. And frankly, that's not this game, certainly not where it shines. There's a million out there that give combat first priority. When you feel that itch - go scratch it there. No game benefits from being a cookie cutter of your favorite game because second in the door is just a low level copy cat with few redeeming qualities. My opinion anyway, YMMV.
Shield = More armor
The only reason a medieval soldier wouldn't carry a shield would be for Pikes, Halberds/Bardiches which were specifically used in formations and took a lot of skill to use effectively.
Which is in the game.
If you want, you could not use them before a certain ingame-year.
