Not All Arrows bleed?
So im guessing not all arrow types bleed animals? It seems to 100% of the time with stone arrows, now that im using copper they never bleed :( seems kinda pointless to try and make any better arrows for hunting then. So what it does more immediate power, if it doesn't keep bleeding them like the stone ones do...

U do more Damage , so u not need Bleeding, and u also can use poison Arrows, which are cheap to produce (And of course currently as Iron Poisoned Version currently the best Price Item in the game) .

I'm not aware there's a dfiference with the type of arrows. If you manage to get them to "stick" in the animal, they bleed out. The type of arrow shouldn't matter. Whether they stick or not, is RNG.
Are you sure it isn't a coincidence so far with your copper arrows?
As far as my observations go... it is not dependant on the type of arrow. Sometime, my coppers bleed, other times they don't. My working hypothesis is that it depends on the quality of the shot. Especially with wisents, I notice that sometimes my arrows stick in the (now raging) animal, whereas other times, they drop.
If you hit the head area then the arrows will usually bounce off causing no bleeding but causes a lot of damage. If you hit them in the side or rear then they usually stick in and cause bleed, although those areas cause less direct damage and the bleed is so minor.

So just Go For The Head.
a tooltip mentions that bleeding occurs when the arrow penetrates the skin.

I wish the bleeding DOT was stackable and a bit stronger. Likewise the poison DOT.

Or you could rework the poison to slow the enemy.

If you don’t manage to get a head or kill shot and have to shoot again your arrows/bolts will just bounce off. This is why you use the inspector mode to find lost arrows/bolts.
Some shots will bleed while others do not. Your supposed to be able to use inspector mode and Tracker skill to find a wounded animal. Most of the time it just simply doesn’t work.
I made a length of road, put an archery target at one end and got some planks. I shot an arrow into the target, noted the distance and moved. I have planks laid out at 15, 20, 25 and 30 meters. I spent a lot of time making my archery range to have some better knowledge of how bolts/arrows fly, approximately where I can get a kill shot. Even if I don’t go hunting, I still use my target now and then.

I have definitely had multiple arrows stuck in deer after it bled out.

This is not true... I have had wisents die with arrows in their butt (indeed, I am not afraid to shoot an animal in the back)
