As for the bandits and animals; if you build something close to their spawn location; the next season they'll be gone (except for the fixed ruins on the Oxbow map).
I think even a decorative item is enough to make the spawn point disappear.
Once you establish a decent and dependable source of coin, fast-travel becomes a regular thing. Similarly, once you've progressed to the point of having a mount, traversing the map (even through predator territory) becomes trivial.
I recommend settling in the hills, because it's impossible to build anything where you want -- thereby forcing you to place your buildings in a much more unique and "organic" layout. But, if you like grids, find some flat land near the river and go with that.
A second recommendation might be to settle near a Mine. It depends on how much mining you aim to do. I love mining and do way too much of it.
