Report a translation problem
I am sorry, but there're just too many hints there might be a function like this to assume there isn't. May it be a UI-Translation issue? What does MMB say on your localisation, when you equip a hammer?
Let alone the btw fact that it totally would be useful, especially for landing stages (Tier 0 Bridges, as their overall height mostly is useless for knee-height waters). :)
Clicking the middle mouse button switches between rotate and height, and once you switched to height, you'll see that the two buttons next to it (Q and E by default) are now letting you change the height of your platform: https://imgur.com/a/dj01uyv
So for gods sake the key description is incomplete here, as it for one: only says "construction menu" in the key settings UI tab where it should be called "Construction Menu/Height Toggle" and two: doesn't change the display button for the UI when you are building something, bc the displayed UI element is a blunt, static and not a dynamic one, which means it needs manual changing by the devs, as there's no function check behind it that would lead to an icon switch to display the correct key now.
Instead the game insists on MMB being the right button to change height, but it's wrong. This is a classic remaining Early Access ghost here, as in fact the game should either link to the construction menu button, no matter which one it is at the moment of check OR have a static info on it that says that you should "use the key for the construction menu" to adjust height.
It's pretty weird actually, that until now this isn't documented that well, as I simply couldn't find anything about this topic elsewhere or how to fix it; but however: If that is of any interest, I'd consider to add it to the patch list, as this is a veeeeeery old dead end UI bug and incredibly easy to fix as well.
Yes, that on the other hand was my bad, I'm sorry for the confusion: I remembered I got this issue with the very same combo for buildings ect over a year before too, but apparently they tossed this in the meanwhile for the buildings where this wasn't intended to function and now it's back for the Bridges but apparently functioning... given the case you have a vanilla key-set. To me the button now is TAB to toggle height adjustment.
So to set this clear for everyone having a custom key setup that can't adjust height:

The bridges have only been around for six months. To notice the problem, you have to know the function and have looked closely enough to realize that it is not a problem on the user side. And then you also have to report it.
I wrote a guide on bridges, and someone in the comments had the same problem. I will send him the link to this thread :) I wish you guys that it gets fixed quickly.

Which is an interesting & pretty effortful generated guide I have - funnily enough - found on my journey to try to fix this problem, plus read the user's comment about having the same problem. I also planned about posting a comment on it later today to pass on the intel as it simply was a tad too late for me yesterday. But it seems you got it covered though, so thanks for waving by. :)
