No it does not. Kaffee may have the answer that as I stated earlier only certain buildings are capable of wall upgrades but this fact is not disclosed in game. I don't think I can upgrade simple houses either but I will try once again.
Choices are waddle, wood or stone. If you later want to insulate them, the waddle and wood will need daub and the stone will need lime. You can also change where you want the windows, the walls and the doorways (with the requirement of having exactly 1 doorway).
If you wanna try it out, save your game first, set your hammer to destroy and simply destroy one of your walls, then you'll see. :-)
You can't change wall types for working buildings (also you never could in any version of this game).
Only type of buildings which offer to select 3 different materials for walls and roof are residential buildings (and have been like this since the earliest days when the game started in early access).
If you want to have other wall types for any commercial building you'll need to build another level of the building.
For all working buildings the different sorts of wall (also roof) materials are bound to the tier of said building.
General rule which sort of materials are used for wall and roof:
tier 1 buildings: wattle walls, straw roof
tier 2 buildings: wood walls, wooden roof
tier 3 buildings: stone walls, wooden tile roof
The above listed can't be changed.
However, you can add "insulation" to industrial and commercial buildings but this is for decoration purposes only (as the working buildings don't need firewood at all).

It is very unlikely that the existing mechanics will be changed the way you want.
The reason for this is that all types of walls can be changed during the construction of any residential building, not only in terms of material, but in addition you can also choose for each individual wall whether it should have a window, for example, or not. You can also change the default position of the entrance door at your own discretion.
This freedom with regard to the basic layout of all residential buildings necessarily presupposes that you can change each individual wall individually - the same therefore also applies to the selection of the building material.
If such a minor detail makes you angry, I recommend a walk in the fresh air or another game. Maybe this one just isn't your cup of tea.
