quality of the house (wattle, log, stone, upgraded or not)

there should be firewood or other wood in the resource storage or their house chest
mood goes up when they work in a job where they have the highest skill, when they find a partner, when they get a baby, when they get a second baby, when they live in a four bed house or a big four bed house.
All other factors like talking to them or making special food or whatever does not affect their mood at the moment in the current game. It might come later but for now, one of the factors I mentioned must be the reason for a worker's mood to drop.
Moods in the 50s is fine. Absolutely nothing to worry about, but your villagers ought to be doing virtually everything for you, depending on what stage of the game you are at.
Are you aware that you can build stone houses from the very beginning by selecting a wall with your hammer and then pressing E?
And no, I wasn't really aware of it, till I read it some where.
Building from scratch means you place the foundation, hold the hammer in your hand with build mode so that the walls are highlighted and then press E. You actually see that option, it is written there. And then you can choose between sticks, logs or stones. Same with roofs, three options.
Upgrading is what you need a skill point for. You can upgrade stick and log houses with daub and stone houses with limestone. For upgrading, you choose the option to upgrade in the hammer menu.
Please look at guides, they can help a lot. https://steamcommunity.com/sharedfiles/filedetails/?id=2238348707
