The following things affect a villager's mood:
Food availability.
Firewood availability.
Housing: Villagers like bigger houses, made of better materials, with upgraded walls.
Villagers like having a job. They like it even more when the job uses their highest skill.
Villagers like being married and having kids.
Personally, I make sure the villagers have food and firewood. I house them in simple small houses, with stone walls and wood tile roofs. Sometimes I upgrade the walls with limestone. (I prefer this housing because it reduces firewood consumption. The mood effect is just a bonus.) I assign each villager to a job that uses their best skill. I don't worry too much about their personal lives. Some get married and have a kid. Others don't. My villagers' mood varies from the low 30s to the mid 50s.
The new mood system was introduced some time ago, it gets from -50 to +50.
For some time now, houses have only been available in pairs, i.e. men and women.
When you build a house stop after laying the ghost of the house with the 10 logs AND THEN before adding to the modules use the "E" key to change out each and every wall and roof tile to the highest materials, i.e., Stone walls and Plank rooves
Any simple small house has to go ... Build better houses, transfer your families to them then destroy those noobie simple small houses ASAP
You need to get the talent to Upgrade modules from the skill section and use limestone on each and every house's stone walls
