Kitchen recipes showing Red

All the recipes in my Kitchen II are red except for Roast Meat and Roast Fish and I cannot make any of those recipes in Red or check the box to assign them. I reset my skills and spent 3 points in my cooking. (I had one point before.) I am in Oxbow and this is probably my fourth iteration and had no issues with kitchen in my first play through. Had no issue in the Valley either. Help??

You have to buy the recipes on the Tech tab - look under Kitchen I, Kitchen II and Tavern in the Production tab there
