Fastest way to level Villagers ?
So far it seems

Diplomacy = Well trader Very fast
Farming = Beekeeper Fast
Crafting = Making Mead or the basic textiles ???? (not sure about that)
Ressources = Good question if there is any way better
Survival = Fishing Hut (i read that no tests from me until now, the post mentioned fishing and salting)
Hunting = No matter what they do all is very slow

For farming grubbing fields is quite fast but they won't produce anything.

Sewing hut will level crafting the fastest. Workshop making clay items can work too if sewing resources are low.

For extraction I would say woodshed with full logs.

For survival a herbalist is probably fastest and more useful.

Hunting is just slow. Having them gather leather with some salting is probably fastest. Some say feathers.

I can say for sure that Drying meat and gathering meat is 99% the same.
Salting is very material intensive, so maybe its worth a try

Well they increased the xp from salting meat. Still slow though. Maybe gather the meat yourself and let them salt it? 20% salting, 80% leather to fuel the sewing hut.

Most job level up by the total value they produce each day, except working on field and orchard.

For me:
- Diplomat (market stall)
- Crafting: cook and seamster are the two that level up rather fast for me.
- Extraction: most job level about the same rate, or slightly faster than most farmers.
- Farming: i don't rotate crop filed, so my field workers get far less experience than animals breeders. My barn workers usually level up faster than other farming jobs
- Survival: not real much slower than some farming jobs.

Husbandry = Beekeeper is quickly leveled up, and then I move them into another farm task position.

That's true. It's almost 4x the next best thing (cow milk). The worst season (Winter) still beat everything else.

Assuming that animal breeder gain experience based on the base value of their products, here is a very rough per day comparison (based on a level 9 animal breeder, 88% mood, 100% intensity for each item, number will scale with level):

Honey (Spring): 305.14 honey @ 10 coins = 3,054.1
Honey (Summer): 256.46 @10c = 2,564.6
Honey (Autumn): 122.57 @ 10c = 1,225.7
Honey (Winter): 49.54 @ 10c = 495.4
Milk (cow): 4.87 @ 96c = 467.52
Wool: 89.83 @ 5c = 449.15
Milk (goat): 3.03 @ 96c = 290.88
Manure: 269.72 @ 0.9c = 242.748
Feather (goose): 213 @ 0.9c = 191.7
Egg (chicken): 71.81 @ 1c = 71.81
Feather (chicken): 68.16 @ 0.9c = 61.344
Egg (goose): 16.74 @ 1c = 16.74

Edit2: surprisingly, a level 9 hunter at 93% mood, making 100% dried meat will beat the #4 in the above list. (Note: I don't have a level 9 hunter with 88% mood, each mood gives 0.2% production bonus). So, I don't see how hunters are really bad at leveling up. May be slower, but not bad.

Here is rough per day production of a level 9 hunter, 93% mood, making 100% of each item

Dried meat: 67.61 @ 8c = 540.08
Salted meat: 42.84 @ 11c = 471.24
Fur: 77.46 @ 4c = 309.84
Leather: 34.25 @ 8c = 274
Feather: 245.26 @ 0.9c = 220.734
Meat: 38.3 @ 4c = 153.2

Meat production is rather disappointing. Dead last in all products? Did I make a mistake somewhere?

There is one thing that I did not check for is the number of animals. I'm not sure if that would change the amount produce daily. For example: would 2 cow produce more milk than one cow? The amount of wool produce in A fold with 10 sheep vs a fold with 5 sheep? If so, some numbers could change significantly.

Yes, More animals means more production. Ranching jobs in general just pump XP.

Hmm looks as if the Mood is important for the leveling speed
And yes looks as if the houses will raise the Mood
(Insulated stonewalls, wood roofs and 10 Pieces of decoration per house)

30 Day Seasons
29 Villagers

Amount of lvl 10 skills
14 in Production
3 in Survival
29 in Diplomacy
19 in Farming (well its only 2 Years so even with 2000 Plots its very slow)
Zero in Hunting (one 8 and one 7)
16 in Extraction

Yes, but indirectly. A high mood increases production, which means more value is created and therefore faster skilling.

Also: If there are two people in the building, more value is created. Even more if one person already has a high level. This means levelling is also faster.

I gave it up, started a new game and set the Xp to 100 000 %
Now i have it all on 10 at end of the 30 Day season

Something you forgot in your calculations. Salted meat produces 10x the amount dried meat does. So while the Goods Production page has a salted meat output lower than dried meat, the Current Production page shows a much different number. Course it also uses 10 uncooked meat, but if you are doing the hunting it shouldn't be too much of a problem. Although the game might have changed since you wrote this almost 4 months ago cause he prices for meat are different: meat: 3c, dried meat: 6c, and salted meat: 8c. The other prices of hunting goods are as you listed still.
