Report a translation problem
The only work you can´t do by yourself (but your wife/son can do) is effectiv livestock farming. You can´t collect eggs, feathers, manure and honey.
You would have a very slow progression, because your workers don´t deliver tech points and it could get fast boring, because its not many thing to do. And the crafting part is just idle like, i like to let my workers do that part, instead of me.
You don't need a kitchen if you don't have an NPC cook, unless you really want to bake pies.
I started solo but rapidly found out that was missing something so I get married and have a son that force me to keep an eye on there needs on top of my own.
I play with no animals, so I have to hunt, fishing and grow my food. To make it more interesting, I don't buy nothing, I must found my seeds from barrels and bags and every years get more seeds from the harvest.
I also don't ware winter clothes that way I really have to survive winter. Once I unlock the proper skill ( sorry I don't remember the name of the skill that give you extra degrees) when reaching level three I don't freeze so rapidly but still have to warm up once in a while.
I don't build the resource and food storage, I found that that once my wife empty a bucket of water, it disappear so I have to continuously build more buckets
Also all food, wood and water goes into the house chest, the food also get rot faster so I have to keep an eye on it.
All the shed and shops must be built next to the resource, like the extraction shed next to a clay pit, herbalist in a flower field, smithy next to a mine... That make me travel a lot to reach all the resource that I need.
I grow crops to get some extra money just to buy the unlocked recipes that I need. I play four days so I don't have to much time to do everything in each seasons. I don't do the quests only the first necessary chapter to get the buildings limit (set at 200%) I also increased the technology multiplier to 120% because I don't have settlers to help with that. The enemy damage / hp are set to 150%. And I set the tax to 0 of course.
I have to say that is playing a totally different game and I love it.

Alive, you’re hard core! Kudos! Sounds like a great challenge. Good info, I will up the experience% so it won’t be a boring grind. TY. I already play with unlimited stamina and carry capacity and I cannot/will not go back, so that too helps with the grind.
I’m looking forward to choosing a beautiful new spot for this tiny town! The age old dilemma of where?!?

The memorial tree area is a great suggestion! I’m also considering the triple falls area. I initially chose the central lake with a view of the mountains, pretty and flat, but I think your suggestions are better. TY!
