Everything else depends on the specific situation. Once I just followed the Villagers and blocked off individual passages (through rocks) that they wanted to use, so that my bridge was the next best option. Sometimes it helps to fence off the entire bank area.
...It may also help to move the Farmshed a little, e.g. closer to the shore, and try it out a little. I think I once read something along these lines, but I can't give you any guarantees.
I know how to make my game more profitable I choose knot to.
I know you meant the word "not" so I'll try not to get myself tied into a knot over it.
Maybe someone has already built there and can report from experience for the exact location.
Otherwise, your best chance is probably to start with the bridge where your people usually enter the water and block the "wrong" paths step by step. Since you probably haven't bought the blueprints yet, I strongly advise against the first one (too shallow for large bridges). On the picture you can see all 5 in the right order. If you are interested in more general bridge building tips, I can think of a few more.

The cheapest and only safe option would be to move the farmer's house so that it is very close to the farmshed. I don't suppose that's an option, but it would be the safest bet.

2)built my bridge(A very nice looking bridge I might add), and my i̶d̶i̶o̶t̶s̶, villagers walk over it, only to get to the end, enter the river and walk back to the island. My m̶i̶n̶i̶o̶n̶s̶ villagers are here to do my bidding, not saunter around the valley sketching dam owls.
Oh the question, how do I stop my dear people from unnecessary using the bridge and then back tracking on themselves, before any smart *** suggests a toll (ie charge them to use the bridge) I tried that, replies are 'Yer I'll pay tomorrow' or 'I got the month already paid'
