Overall - if playing with friends/loved ones, it's an amazing team-building experience.

HOW
one person hosts. Provides log-on code to others. They join - can come and go freely as long as host game is on.

GAMEPLAY
Co-op mode is a different map/world than the original. You cannot play that original map in co-op. Single-player can choose which map to play.
Each player still looks for an NPC mate / spouse (no marrying other PCs).
You make your own character / customize the appearance, choose to be male or female, and, can name your character.

BENEFITS
Other than the obvious fun of playing with people you know/like, the tasks can be divided by multiple people.
I play with my wife, and good long time gamer friend and his wife. The four of us each take on certain task each day/season. We go off in diff directions to cover more ground. We each go to a different town to obtain info/quests/intel/buy-sell goods. This is a HUGE benefit over single player having to traverse the whole map each season alone.
Quests/missions/goals - pretty much every task you accept, each player's accomplishments contributes to the completion; said different if "Kill 8 wolves" it counts each players kills towards completion.
Co-op is a HUGE benefit to gathering resources. My friend will hit the mine while I chop trees, and wife will gather sticks/stone/berries, etc, and his wife can hit the clay pits. So It's a huge benefit and group efforts.

DOWNSIDES
Mostly this is just individual taste - how much do you like to do everything your self, how agreeable is everyone etc.
The dynamic of the game/group. For instance we all 4 agreed we would only play this world when all 4 of us are able to - relegating to a couple nights a week.
"your" group may agree that's not that important and host just plays whenever and other players can join if/when they want to.
If you love the original map more - you don't have that option, This includes those quests and storylines involving Racimir. Said differently, you dont play the 'campaign' mode as you do in the original map/setting. (which again, you can choose the new map in single player and not play as Racimir also).

Overall with the exception of personal preference for how much you really want to do by yourself vs sharing, (or group availability) and if you're okay not adhering to the original map/campaign, there are no true downsides I've seen to playing co-op. It's all been a blast for us.

One caveat I thought of

A downside of being together - you sometimes get in each others way when fighting. I accidentally killed of my teammates with a wild axe-swing. ooops.

We've had to learn to adjust.
