A food surplus.
Does the quality matter when I sell it in my market stall?
And if so, how do I determine what the seller takes from the warehouse?

You'll get more money for higher % food.
But as market stalls just sell for a certain fixed amount of coin a day (if there's enough product), they'll just sell more of the lower quality food to get to that amount.

Normally workers always take the lowest quality items first; so I think that will be the same for the market stall.

I guess you can use an individual low-quality ingredient for a long time to make a stew or something, instead of making a large quantity of the finished product right away.
When that soup or meat with gravy ends up in the compost, does the bowl or plate also go to waste?

Before multi player update the bowl/plate would be in the compost bin too. I just updated ( yes I know late to party lol) so I don't know if it still is like that now. Don't fill to 600 if you use items that are in/on bowls/plates to have room for them.
A good way to use low Quality is also put food items directly in the boxes in the villagers houses. They should eat that first. Also take low quality items to town and sell it yourself if you want to be sure. You will loose the bowl/plates that way.

I was of the opinion that when you sell low(er) quality items to other marketers, it is at the expense of your reputation.

No, it doesn't matter. You'll only get less money for it.

That you should not be caught stealing and should not sell inferior products. Something along those lines.

Ah, there's a loading screen text that says that people are not interested in buying stone knives and stone axes and that you should make better stuff. This could have been the misunderstanding. Actually you just make more money with items that have a higher value.
