Co-op was a bit of a special one since it requires different coding to get the connection mechanisms to work, so it'll have to be sorta custom made for each platform, which is why there's such a delay for non-Steam platforms.
I assume future updates will come at same time again.

If it's not ready, it's not ready. And it'll be released when it's ready. Which was said to be Q1/Q2 this year.
