Fertilizer isn't a issue with a 2 pigstys producing manure.
after harvesting ~ 300 "squares" of each crop i got these numbers:
average harvest per seed planted:
Onions: 10,2
Cabbage: 7,8
Red Beets: 8
Carrots: 10
(Grain numbers are in seeds not stalks, except flax)
Wheat: 8,4
Oats: 11,76
Rye: 12,04
Flax: (stalks) 6,24
i harvested these myself without yield-increasing skills.
I did this becasue the numbers mentioned on the wiki are out of date. for example according to the wiki cabbage yield is 7-8 per seed, mine was 5 - 12.
If you plan to only feed your village and dont want to overproduce too much, i would recommend 1 16x16 for all grains (still A LOT) and veggie fields not bigger than 5x5. Cabbage maybe even smaller since its harvested twice a year.
With this i could easily feed a village of 70 people (including hunter II and fisher I)
I don't bother with any veg other than cabbage since pottage is fine as food. There are only two meals, Multigrain bread and Cheese, that have higher food value (apart from pies and tarts) so I see no point in other veg.
Cabbage has the advantage that the unused left overs make lots of fertiliser.

3 wisent per season (3 days) is usually enough.

You harvest that 2-3 times and you will be set for the game.
Technically oat and rye can share the same field but I am to lazy to manually swap them.
So 5x6 each and that provides enough animal feed to support one full pen of everything except goats.
I have 4x4 fields of everything else but I only sell them.
One farmshed with 2 workers is all I need.
This covers my direct needs but for farming tech it is on the low end.

Then you'll have to take into consideration which consumables you want to produce at what production rate in the kitchen/tavern, to plant the correct amount of orchards providing the demanded fruits per year.
That said, I'm (greatly) overproducing all the food and the poppy, in large part because I'm using them for 'decoration' as well. Houses with a tiny vegetable garden of their own just look so good! I mean, they'd look even better if there was a larger variety of produce, especially if some of it grew to mid-height, but having a tiny field here and there in your village can really make things look better.
Also, I'm currently using tons of linen-related items in the various decor around the village, and I'm also aiming for the "having one million [currency]" achievement. I've always found flax to be easier and more enjoyable to earn money with than the metals. Harvesting flax is just... soothing, somehow
I'm not sure how many orchard trees I have. I mostly use those for decoration as well. Never really bothered with the juice, wine or pie production, aside from using such items as decoration.
I did ran a few flax harvests to get tread for curtains and other decorations.. in my 50 houses
as despite having infinite money (well not infinite but 50000 coin per day, with 30 days a seasons... pretty much is as good as infinite)... the traders just sell not enough for what you need.
Smaller fields are better for the villagers to work. Even now at 4 day seasons I only use two and one is beekeeper about half the time. Do have the worker speed perk. Early on I also do all the harvesting as I have the qty perk. At some point I no longer care. ymmv
Also use trees and fields as deco but don't count them just like the looks.
I can't speak for the others, obviously, but the reason why I use small plots is because I typically don't remove trees for aesthetic reasons (thus limiting space), and because smaller fields means more walls and decoration in between, which also looks good. Aesthetics again :P.
