Classic (The Valley) is good to learn the mechanics of the game along with chapter, story & side quests and challenges. With Oxbow, it's great to explore a new map (it's beautiful, with a lot more build-able locations); there are ruined buildings scattered around the map, along with the usual bandit camps and loot carts. At the moment, story and side quests are available but no chapter quests or challenges - these are meaty enough to add interest. There are some bugs but solo seems more stable than co-op; all bugs seems to be being identified or worked on with lots of mini-patches following regularly
With regards to fun and game-play, take your pick - Classic and Oxbow are both worth playing solo even though there is still more content to come out (not played co-op so can't say on that count)
Oxbow also is not story driven like Valley is. In the Valley you have chapter quests that you have to do to unlock your building limit. Oxbow you can build your max right away.
With that said I prefer the Oxbow map, being able to play as a female character made all the difference to me. Loving the new map and have played the longest so far than I ever did on the Valley.
All depends on your preferences. There are a couple of achievements you can only get on the Valley map. If you want the achievements then finish the Valley then go to Oxbow.
The Oxbow map is same size as the Valley map.
Oxbow is missing some content from the valley map such as no chapter quests, no sesonal challenges, no kings quests and no spouse quests.
Being able to play as a female and customize my character outweighs the missing content.
