Take your time, sneak and lead the shot. Go for the head when possible, but a good center mass can bleed and slow them to help finish it.
There is something wrong with your boars if that happens, they work just fine for me at least, and ive never seen that happen. Unless you managed to get turned around and loose track of its corpse, thats quite a bug. If you're sure thats whats happening, you should report it in the bug section=)
Keep at it=D
Edit: You can also alter animal HP/DMG in the game customisation settings. You change this ingame by hitting escape and finding the option under "Customise Game".
Hunting is easy, you can kill anything with wooden spears. I have killed herds of Wisecent near my village with wooden spears with no issue. Just have to be smart about it.
After my initial hesitation and worry, I found boars to be rather easy kills. They're big and quite slow, plus they posture and scream at you before charging, which allows you to get at least one good hit in even if you didn't see them. At worst, you get to run away. Two thrown wooden spears to the face are generally enough to kill one. If it doesn't, you probably missed one of your throws. They're also fairly easy to dodge simply by sidestepping (or running, rather) at the last moment.
It helps to get your hunting to level 2 by killing birds and whatever you manage (like boars) by throwing spears at them so you can get the hunter vision perk.
Always carry a club with you in case things get hairy, or to smack a rabbit. Either I need more practice, or the spear is bad for stabbing things.
The points are the same for a clubbed/axed rabbit and a trap rabbit.
Emptying the traps (rabbit and bird) as much as possible, my skill points rise better than when I hunted a large amount of deer, even with levelling up the % of points given.
