Metal tools are great of any kind, and very easy to get as long as you know where the mines are.
Really, the only struggle is the first season or two, and as mentioned by other users, killing some of the bigger animals with a bow (Wisents in particular are both pretty easy and give you tons of materials) you will have plenty of early game food and money.
When you can start with an Iron Pickaxe, mining Copper nodes and making Copper Knives is a no-brainer for me.
Without theft, it takes most (all?) of the first season just to get that first bit of startup money.
I think the "best" goal is to procure a Bronze Axe and an Iron Pickaxe as quickly as possible.
Using a Bow and Iron Arrows against Wisent, Moose, & Bear will quickly get you enough (Simple Bag) and (Roasted Meat) to level up your Production Tech to 50 and line your pockets with at least 2000 gold.
In every case, I like to start Day 1 building three Houses and three Woodsheds. While I'm off mining/hunting/farming, the 3 villagers I hired on Day 2 can be stocking up on Logs & sticks for future building & tool construction.
