Valley: you play as Racimir and his story of trying to find his last remaining relative.
There's no character customisation, and you'll always have male heirs.
Oxbow: you can customise your character, also get female heirs, the npc villages are more pretty, and there's a different story with different quests.
The maps are also different, with the Oxbow having aggressive wildlife a bit closer together than the Valley has.
Technically Oxbow only just released and might have a few more quest bugs.
Its a good starting map, very friendly, lots of smaller villages and good flat land to build on all over.
Oxbow on the other hand has character customization (both sexes playable), less villages, but larger and more detailed, the map seems more detailed aswell, with ruins and more things littering the landscape. Some new types of side quests and prob more! (I just started on oxbow myself!)
Oh, and Co-op is possible on the Oxbow map! Up to 4 players.
So as i said, i just started myself, but ive played quite a bit on the original map.
I allready find oxbow more fun, for a few reason, the main being the fact that the villages feel more developed, it all feels a bit more alive.
I feel the devs learned alot making the first one, and now applied what they learned to this new map.
You could give the maps a look quite easily by starting one of them, then hitting escape and selecting..."Map Customization/Game Customization" (Cant remember what its called right now) and ticking on Unlimited Stamina/Health and just run all over to check them out=)
Edit: Ah, yes, as Morri said, there might be some bugs around Oxbow, as it was indeed JUST released.
Its working very well for me, Ive noticed changes, but not much when it comes to bugs.
The changes ive been seeing has been on both maps, mostly regarding animal sight cones etc. Some will prob be tweaked over time, but its a nice change imo=)
