I've so far never run out of need for stone. As soon as the Mine is unlocked, I stop mining by hand, though, so I haven't quite been in your shoes yet.
I new that be my house one day lol my father would not need to move from his estate and his place would be my son's place. So life go's on.
In an earlier game i would have my workers use cobber tools at lvl 1 smith. Bronze at lvl 2 and iron at lvl 3. in current game played real slow in recruitment so built stone houses for everyone. In an earlier game rushed with the recruitment so houses was wood.

Oh, I can so identify with hoarding (thankfully in game only and not IRL).
I have mine piled up against the half wall on the other side of the resource building - on the opposite side from where many of us pile the logs. I have my various bars in crates. I also have a couple of large wicker baskets - one with stone and another with limestone. I have planks over by the wall to the left of the resource building's chest. I kind of got lazy and just dropped a pile of a few thousand planks at once. Of course, since we can only "grab" single items, I had to do the drop the plank collection a few times before I was okay with how it landed.
I've got a single clump of a few thousand copper ores sitting on one of my chests because I needed to make space in a hurry. It just occurred to me that I could use wicker baskets for ores. Don't know why I didn't think of that before. Well now, time to spin up the game.
