Each wheat field yields 7-8 Wheat. So, a 10x10 plot will yield an average of 750 Wheat Grain annually.
( 750 - 100 ) / ( 4 seasons * 3 days ) = 54.17 Wheat Grain available for daily production purposes.
As long as you keep total daily Wheat usage below 54.17, you should always have enough to replant next year.
Since that math was done against 100, you can just figure your number of fields times 54% to determine your daily limit.
Hopefully, someone will double-check my math. I'm still new to this.
It is the same with all the different seeds you end up with extra after a harvest. I would love to have the merchants sell or kitchen to make wheat bread but dare not do it in case will run out. So end up with me just sell it myself or make the bread.
