It all depends on if you need the flour all at once. If you don't, you benefit from having the one mill worker turning out flour year round, while the barn is focused on other items.
or you build multiple mills. But I agree mills and grain vs grain consumption as well as mines vs smiths you need sooo many smiths to process the outcome of a single mine) is oddly imbalanced in my opinion.
later in game just skip most of the day y sleeping let the NPC's handle stuff xD

6 oat= 10 flour.
6 rye= 10 flour
Mill.
6 wheat= 15 flour.
6 oat= 12 flour
6 rye= 12 flour.
It is definitely not worth it now unless I am missing something.
