Don't speak to Uniegost, EVER!?
If I don't speak to Unigost to start main quest and the seasons/years pass by, will he eventually die of old age and I fail the quest before it starts? Or does he not start his aging process until you actually speak to him?

Every quest has a time limit, even the Uniegost ones. You do need to speak with him initially to get permission to start building. Other then that it's not required to follow the quest line since building limit depends on the chapters, not on the Uniegost quest

I do want to eventually start his quest but at a later day after I have a good amount of resources. Will he die before I'm ready if I don't speak to him at all not even to start tutorial?

You could always set the game to have 30 day seasons in the beginning (you can change that later), so that a year is 120 days. That should give you time to build up just about anything you'd want in just a couple years.

I personally don't talk to him for roughly 30 days at the start of a game, so that I can flirt enough to get diplomacy skills high enough to get the +60% Dynasty Reputation points before I begin the story quests.

All the villagers age regardless of what you do but you can talk to Unigost the first time without starting his full quest. I'm not sure if his quest will eventually expire because I've always done it sometime in the first 2 or 3 years. I know that Alwins and Sambors quests do expire if you don't start them.
Interestingly, there's no time limit for the very first quest, so perhaps his successor will continue this quest if he dies.

I forgot to do Sambors quest.. Then when I did remember I rushed all the way to that nasty sales girl. then to get the potion, it said wait til the next day... The next day it said Quest Failed :{ Now I can't buy little animals

Thanks hubbemattsson:) Just went and checked the bald headed twerp. He's 85 and told me to 'go away' I tried shooting him but that didn't work :)

They tend to live a lot longer than normal npc's too, so you'll probably need to still wait quite a while :-)

To OP: I'm not 100% sure, but I think the quest will expire even if you never accept it, so I think you won't be able to do it anymore if you wait too long; even if he didn't die of old age yet.
You should have ample time to collect the resources you want before that happens though. What amount of resources are you thinking about?

IIRC, you can't build anything at all, not even a campfire, until you've talked to him for the first time. So there's no point in delaying that initial conversation.

It only takes a year or two at most to finish his quest-line, so you have something like 40 real-world hours to ignore him before you start to risk not being able to complete his quests before he dies/they expire.
