Occasionally the Herald will give a king challenge that requires the crops as they are harvested Eg Wheat, Oat, Rye. (Can’t remember if you need all three or just one specific crop.) But as you have five seasons in which to complete a Challenge Quest, you would have enough seasons to harvest fresh crops and NOT thresh them into grain. (Or purchase the Oat/Rye/Wheat from the NPC vendors.)

no, you can not. unharvested crops will be destroyed at start of next season.
**if you ask do wheat stalks, oat stalks and rye stalks have recepies they can be used for without treshing them.
no they can not, all recepies use flour or the seeds which only can be obtained by treshing or milling

yes thats possible grain stalks do not rot in your inventory nor when dropped on the ground.
Any work done by others is always easier :-). So, I advise you to use villagers, assign them to the barn and give them the job of turning into grains.
But i thresh all the others into grain straight away yes, no reason not to.
Oats I'm sorry are also used in conjunction with rye and straw to make animal feed. Those rates are 1 oat, 1 rye, 5 straw.
but not always superior.. you have a skill that can give extra resources when harvested or treshed. your villagers do not.
Einkorn or Emmer is the name for what the game calls wheat generically, more authentic. You can still buy it and it has not been genetically modified.
