But you can find lose ore randomly as treasure near abandoned camps, carts, barrels etc.
Well, the only ones in a tunnel I know about, is a few lose ones strewn at the foot of a little mound of stone in the middle of some water, i think with a bag or backpack near as well. This one: https://steamcommunity.com/app/1129580/discussions/4/5440953210420853911/
But none that are actually mineable with a pickaxe.

ok look at the map going north from Hornica there is a stream, north of that is another stream, on that stream there is a place that looks like it splits and returns (damn, I have struggled to re-find this place and thought I have to post I cant find it(this typing is in real time so go with the flow)) once your on that stream go down stream and you come to a tunnel that the water has carved out, there is a 'bronze pick?' axe there then if you follow the water theres a water fall.STOP thats where i am referring to. PLEASE Morri check this out a clarify my directions.

It's one of the random spawn points where you can sometimes find lose ores laying around yes. There's a few, and they can spawn randomly each season.
Because these ores would easily be missed when they are just laying on the rocks, they have put a pickaxe near them for you to spot, so you'll know to look a bit closer.
(They do the same thing with hidden chests, or a small pile of rocks with coin under btw; adding a shovel next to it, so you'll notice the spot more easy.)
I like all those little touches. Though I must admit, I was a tadbit disappointed that none of the waterfalls in this game have a hidden area behind them.
(That's rule #1 in video games; always check behind the waterfalls xD)
