Miner
I hired a miner but when I go to the excavation shed to assign work to him, I only see a choice of clay, stone, limestone and straw.
I want to assign him to iron, cooper, etc. I have clicked on a mine but nothing happens.

The excavation shed is where you indeed can only mine for clay, stone etc.
If you want to dig up ores, you'll need to build a mine building and assign your workers there instead of the excavation shed.

(The mine buildings you can only place on top of the entrance of the 5 existing caves)

Pro-tip: build a storage building near a mine and you can "manually" mine for copper, tin and salt yourself. Iron mining is still a ways off if you've just started. It's not required to have a storage building, just far more convenient than running back and forth from your village.

That is correct. You can collect "above ground" resources in the excavation shed.
Need a mine for workers to produce ores for you.
You can only build these in the caves.

I haven't found any mines yet and I've visited all of the villages multiple times. :steamsad:

There are not all near the villages.

There are plenty maps showing there location in the "Guide" section.

You only need a mine for iron (and for miners). All the other ores and minerals are mineable without a mine building (if you mine them yourself).

If you're very observant, you can find most of the mines on your in-game map. Look around the surrounding countryside between Branica and Baranica for a cave mouth. Zoom in with your mouse wheel and click/drag the map to search.

Villagers collecting stones, clay and straw should be called gatherers, not miners.

Maybe, but the limestone your villagers also take from the excavation hut, is mined with a pickaxe, so in that regard "miner" is more accurate.
