You can mount a horse. And you can sell them for some revenue. Like other animals
They won't die and they will breed.
Animal Feed is more like a tool. The worker of the henhouse (for example) needs it to produce eggs and feathers.
But since horses and donkeys don't produce anything, you don't need a worker or animal feed.
Only negative is the Warning-Symbol for unfed animals all the time.
Edit:
Some time ago, I suggested to disable the whistle-function for unfed horses. But that's kinda nonsense, because it's a skill, you'll have to invest a point in.
Better would be: The Horse doesn't react to WASD
- Animals don't reproduce if they are hungry.
So yes, you need to feed your horses if you want then to breed.
There is no point in assigning a villager to the stable or donkeys. Their feed seems to last a while anyway. You can fill the feed like once a year or something.
(In the current live version they also don't need feed to breed, but this is changed starting the 1.5.0.1+ version atm on public staging.)
So there is 0 reason to assign a worker to donkeys and horses.
They breed fine without a worker.
The only thing you need to do after the patch 1.5.0.1+ is make sure they have feed, which you can put in their stable yourself.
But if you want, you can add a worker, so he/she feeds them for you.
