Is there a list of what the different herbs look like and where /when to harvest them?

If you have a herbalist hut, check the production tab for information on the seasonal availability. None are available in Winter. They also have some pics that give you a bit of an idea.
Other than that, as you move around look at any flowers you see and the name and prompt to collect should come up. They are available in many places in the right season.

You could also look on some of the tables in some of the villages. They often have herbs on them.

If you want to collect flowers yourself, there is a flower field just south of the swamp up north.
