(The only exception to this is the people working the fields; they have to physically be working on the field to produce results. So for them it's actually necessary to have the barn, fields and their house relatively close by)
Second: If you have a resource storage building, your villagers can take the firewood directly from there. Same thing with a food storage building for food and drink. It doesn't matter where those storage buildings are placed, your villagers have access to them automatically, where-ever they are.
You will only need to place firewood and food/drink in their house chests if you don't have those two storage buildings.
Their mood will go down if they don't have access to food or firewood yes, til eventually they get so upset (mood drops to -100) that they leave your village. But you get a warning on the top left of your screen when there are villagers without food, water or firewood.
Farmers work more efficiently when they live close to the barn, fields & orchards as they physically visit the barn before going to a field/orchard to do tasks. They are the only workers who animation is directly linked to how much work they get done. Eg if they aren't in a field doing the animation of harvesting a crop then the crop will not get harvested, etc.
All other workers produce what you have assigned them in the individual building job assignment tab - even if they are not in their work place the entire day. eg: You can have a Cook walking all day and never reach the kitchen and they will still make the food you assigned them to make.
But like you, and I think many others, I always build houses near the mines and give them a fire to sit round in the evening simply because watching them spend all day walking backwards and forwards across the map does not seem "right" :-)
Also, does the worker actually deplete rock outcroppings when harvesting stone, or is it just a math formula, and I can walk over and mine those myself without impacting the worker?
Its a good thing but also a bit immersion breaking.

Ditto! I assign husband and wife mining teams and I build them a tiny outpost with a simple house or two, a smithy, an extraction shed, a stone campfire, and a table with some stuff on it to give the camp a "lived in" feel. It's just for fun. And also, because my miners get in my way when I'm galloping around on my horse.
i too like giving miners a house just have to make sure who your assigning. normally i spread sheet just on skill without any other thought. naming those houses can help for quickly picking the right house.
