A tip though; when they have taken damage, they are a lot slower. So I find that once I've hit them and they run away, I can chase after them with my axe and keep up with them or even outrun them.
p.s. A direct hit at the base of the neck (or to the head) seems to be the most effective. Then I rush to skin them because they still seem alive but suffering.
If you hit it in the head :-)
ETA: You can also reduce health of enemies in game options if you want to get in some practice without having to constantly chase them. Once you get the hang of it, you can boost the hp slowly to where it feels comfortable yet challenging enough
Can anyone confirm the game has weakpoints like headshots/hits?

If you read carefully all the sentences where speculations or just opinions.
I wanted a clear yes or no not some rambling opinion.
Also depending on the realism no one would shoot a deer in the head especially with a bow.
