For the crops, the harvesting gives you more seeds, so you have to keep enough to sow the field for next season. This way you never buy again seeds.

Once the animal reaches maturity be it chook rooster goose cow bull pigs sheep goats mule horse, open your management click on animals then select one of the animals from the list here you can see the age of them and holding X below you can sell them for cash.
In the game press q and select farming then orchard you can plant fruit tree from saplings which can be purchases or found at over turned carts.
Takes a few seaons before they fruit then the same trees will produce every year for many years.
To grow more fruit trees sapling we have to buy more saplings. Orchards are very low maintinence.
Set your barn workers to produce flour and seeds and grains, from fields.
Also im sure they call the apple saplings seeds in the game but i may be wrong i tend to not notice things sometimes.

I don't name my animal except my horse and my donkey. But I do have fun naming the houses base on the occupants. Like "Lara Craft"
