Atm I'm taking the cowards' way out of shooting at them with poison arrows, and then running away when they come after me. Then when they run back i shoot them in the back!
But when there's eventually only the ranged one left, I'll try your tactic with the tree!
I have the skill for extra health on max, and also quick healing pots with me; but they are of no use with a one-shot. The HP boost one is a good idea though. Maybe that will make me survive if he gets a lucky shot in.
Play the dodge / run away game on the footsoldiers, THEN, when you decide to take on the (ubiquitous) Bowman, stand behind a tree.
Wait until you hear the 'thunk' of their bolt /arrow hitting the tree, then pop out, plink, hide behind tree.
Lather, rinse, repeat.
(PRO_TIP: Don't forget to loot the tree)

Ah! Good idea, I didn't think about that. And i don't think their arrows and bolts will show up in inspector mode, do they? So easy to miss.
Maybe, but then they start getting closer and I start panicking. They have 200% health and do 200% damage, and I play self inflicted iron man mode (I start over when Racimir dies without an heir) - at least in the first few years -, so I really don't wanna die anymore now I'm actually fully happy with my current playthrough. :-)
I think it was called armor and crests, so probably no swords, otherwise they'd probably have mentioned it.
Edit:
Maybe the sword can even be double-handed. So you'll have to choose, if you want the protection of a shield or the damage of a sword. And it would prevent bandits from being equipped with a sword and shield, too.
