Report a translation problem
Along with the heir update some changes have been applied to animal houses.
This means, the player now can pick up specific products in each animal house by himself (e. g. eggs in hen house and geese house) and doesn't need to leave this work completely to NPCs.
The other thing which has changed is that ALL animals now produce a certain amount of manure per day which can be collected by the player as well.

This shows that either we all are complete idiots or we are right. :)

If I remember correctly, you have to wait a season change, so your saddled companion will go back to its “natural” behaviour (if not overburdened) an roam around the assigned stable.
But once you called it in a current season, it will stay where you left it and only play the saddled idle animations.
All other (not saddled) animals will get reset to their stables places even when you sleep a night during your current season.
