Or with a little bit cheesy. Find high unreachable ground or use fences. Build yourself a closed savespot (or a trap for the bear, but could be difficult to close it).
And beware: wisents are similar or even harder (because their chargings).
Hit him with as many ranged shots as you can with the best weapon you can get. I prefer the longbow because the crossbow takes so long to reload. Once they get too close to get a shot off, immediately switch to the best ax you can and give them a few wacks. Heal when needed.
When he gets injured enough he will run then hit him with the ranged weapon again he should die in one or two shots.
I have not tried this with arrows below copper or an ax below bronze, FYI. I've killed 4 or 5 bears this way.

That gives you enough power to hit the bear from far away
I always stand on a hill run away if he charges quickly
Then go back to see if poison worked
a) Have an escape path planned out so you can sprint away from him as soon as you have shot him. (Important that you won't run into another hostile animal when running away.)
b) Crouch so you can sneak up on him to get a head shot reliably. That's max damage and might stun him a bit so he might be a bit slower to charge you.
c) Shoot him in the head.
d) Stand up so you can sprint away from him. Sprint away until he stops chasing you. Either keep running until you no longer hear the game's "you are in danger" music or check periodically if he's still running at you.
I've found there is a limit to how far a bear will chase you from his usual pathing area.
e) Once he's stopped chasing you, then return cautiously back towards where he was ... and repeat the sneak-damage-run away-return cycle until you have cause enough damage that he runs FROM you instead of towards you.
f) At this point, you treat him a bit more like the animals that flee from you when you damage them. You can then chase after him and shoot at him without needing to do the sneak up part. So long as you don't get very close then he probably won't charge you upon sight but instead will flee when you damage him. So long as you reserve your stamina for running away just in case, then it won't matter if he does charge at you.
Yes, I like iron crossbows as my main weapon. Even with wooden bolts they do a substantial amount of damage when you get a head shot. You can load them and then let your stamina come back to 100%. You do not get an stamina drain when you are aiming. YES they are slow to reload so you won't be able to reload before he get to you when he charges .... hence the run away part of my process.
But the sneak-damage-run approach will work with bow & arrows as well, just manage your stamina drain so you have some in reserve for running away.
PS: this approach does NOT work on Wisent ... I find I can't outrun them. My approach then is: a) lots of healing potions, b) when they get close change to a melee weapon and hit them and consume healing potions frequently until they run away because you have hurt them enough c) chase and shoot when they are in the flee phase.
Other way use a bow shoot mid section and as it charges shoot fast as you repeatedly can at the head
