Animal feed
The animal feed ratio of 5-1-1 is to great with 100 animals there isn't enough straw produced.

If you only grow those two cereals and only use them for animal feed then yes you need to go gather quite a bit by hand (but even then, a few hundred should be fairly fast to gather).
Try growing other cereals as well or more than just what you need for your animals, it will solve your problem.

The surplus seeds can be sold for a fair bit of money but there are also several tavern recipes that use grains and/or flour.

You are advanced enough to have 100 animals to feed (and probably not all chickens or you would not have problems with feeding them) but you still have buildings using straw for the roof?

A few of them like the barn or animal houses I would understand but from how you said it it sounds like your houses are still using it as roof material as well.

Maybe we just don't play the same way at all because I have a constant 100+ animal feed in the storage and at least a couple thousand straw (to the point where I am even making some flat straw hats to get rid of some of it).

No everything is maxed out, I suspect the straw is disappearing when the barn workers mill the grains never see any added.

20 horses 8 cows 8 pigs and 4 donkeys is a lot.

Straw roofs? Because, with only a few work buildings, you should be well beyond thatched roofs. For thatched roofs I'm down to:

Barn II
Excavation Shed
Fisherman's Hut

But even from the very beginning I build all my houses with rock walls and shingle roofs.

As for your problem, grow more wheat as you'll both get the straw and you can make flour and turn the flour into flatbread.

Folds coops sty's and cow sheds all use straw only 3 day seasons.

Actually I forgot about those, but I'm not raising cattle or chickens. And I certainly don't have 20 horses... I have one. That's all I need.

Having at least a couple horses lets you get free horses for the future so it's not bad if you plan on playing for years ingame.

If he is raising that many it's probably to breed them and sell them, yu can make quite a bit of money from horses since their base price is high.

i only purchased 4 horses so they breed quickly and have probably sold 10.

I have not had a problem with feed, but I do not have horses yet. So, might have to look at this a bit closer so I do not run into this problem.

Produce oat, rye and wheat... simple as that. Oat and Rye can be also used to simply produce food so you may use it for food as well. Wheat is good for flour BUT it also needs water buckets which kinda complicates things.
What i do, i use rye and oat to produce regular food, animal food. PLUS i sell wheat grain (it is light, you can easily take 1000 wheat grain and sell it for like 5k gold in one trip) for money and for money, again, you can buy animal food (or wheat, rye, oat AND turn them into straw). Not very efficient but it works and it will solve your problem.
I continue to buy animal feed when I'm selling other stuff, so I don't have the NPCs make as much. it is quite often a way of giving the vendor more money to buy more of what you're selling so almost like getting it for free.

20 horses... time for a cull. Find a high value product to sell that doesn't use straw. Problem solved.
