I have a couple rabbits running around my streets since I already knew about it so I avoided the spots that spawn anything bigger (although foxes could have been nice as "pets" as well but I would hate bears or wisents).
They are a right royal pain in the proverbial. They really are just an annoyance but not more so than bears, boars or wolves would be. After a couple of years most animals are not a real threat to you. Almost constantly having scared deer running around bumping into you instead of running away from you is like I said A Right Royal Pain.
The deer are getting into the Orchard and the boar stands menacingly 75 m from the wall entrance again, when he feels like it. That's as it should be. My hunter gets some prey.
If the Devs read this, perhaps restrain the spawning of animals to outside palisades/the log fence when you have those? I agree unprotected towns should be able to be "overrun" by animals.
That's standard NPC behavior. If you have a hunter and kill anything in his area, he'll skin it. Sambor does the same. If you kill anything near his hut and he's up and about, he'll steal your kills.
