best way to start out
so i keep trying and finding it hard to start out, what does everyone do for food? how do you make money? the food thing is bugging me, how meat doesn't seem to do much. does everyone just build tools and sell them?

I don't worry about food and I rarely eat meat.
I make money instead, because with money I can buy 2 flatbreads which will sustain me for a day. It doesn't weigh much, it's cheap and I don't have to waste time hunting for it and cooking it ;)
At the start of the game I aim to raise about 1000 coins, get my survival skills up and build a home. That's day 1.

Making money is easy, even at the start of the game.
Gather sticks & stones to make stone knives. You'll need one yourself anyway as it will speed up berry/herb/straw picking time.
Combining sticks with reeds to craft simple torches is a good easy sellable and you'll need one of those yourself too.
Other than the above, sell berries, mushrooms, herbs etc. and you can make 1k coins per day with very little effort.
Later on you can sell cooked meals, grain, and iron tools or arrows to make a lot more cash.
I also want to get the Unigost quest chain started because the first of these rewards a set of winter clothing and that is a must if you want to be active during the winter!
Along the way to the first quest location, you will be able to find a free waterskin which will also be very useful ;)

sorry making money from sticks-berries-stones-straw is gone as of the update today on the test branch which will come soon to stable branch can not longer sell them

The OP's topic of discussion regards the current stable game and not whatever is being introduced in the experimental branch. As such, currently, the options I suggested are still valid.
Even with any of the changes you refer to, there will still be alternatives to enable you to earn plenty of coins per day, even on day one and certainly enough to afford the purchase of 2 flatbreads per day. Do you really believe that will not be possible?

i just build a workshop and craft wooden spoons from sticks they sell for 2 each and your crafting goes up aswell recipe costs 50 gp

Unfortunately buying flatbreads will also be harder with the new update because they are sold there for 140 coins. That is then about 24 simple torches for 1 flatbread
why would they make it harder? im already struggling! hahah

I can earn 1k coins on day one in the current version without trying hard.
I am certain I can earn close to that in the new version and as such even a 300% increase in the price of flatbread will still be affordable.

in several seasons collect st john plant, create a good amount and sell it. sell by 2coins each. if you gather 200, you make 400 coins. You have 3 days during each season, if for 3 stright days you do this 400*3=1200 coins per season. This till you lvl up and add buildings and people, everything then is so much easier

At the start of the game you can make the game as easy (or hard) as you want.

Just clicking on unlimited weight and unlimited stamina will make the game really easy for most people.

And there are a lot of other things to change to make it even easier.

0.5 times the tax rate (even no taxes)
0.5 animal HP and damage (even no HP and no damage)
unlimited food
unlimited water
no food spoilage
no food poisoning and water poisoning
intolerance to temperature
0,5 NPC food and firewood (or no food and firewood.

- Sticks, Logs, Stones, Clay, Straw, Broadleaf Plantain, St John's Wort and all kind of Berries now can't be sold by the player.

This game is kicking my butt. I hear about people with villages and I have no idea how to get that far. I walk 50 feet and get slaughtered by a wild animal that seems immune to any spear or hand-weapon I can craft from sticks and stones. Maybe I should try harsh language?

And then the "technology" thing. I chop down a small forest just to "gain technology" like how to make a wooden trap for rabbit but can't make a shovel or basket or bucket or something even though I can build a house with a bed. WTF.

You need to buy the Schemes with coin, from the Technology. It will show you the shovel, etc.. if you browse through them. When you purchased it, then you able to make them.

That will definitely increase the difficulty level. I spent most of my first years profiting off berries and straw.

TheMole suggested now Wooden Hoe is the new Berry ;)
Or keep collecting basic material and make tools and sell them.
