But I too would like to have coracles.
The fun part of fishing (whether in game or real life) is the surprise element, not knowing what's gonna come at the end of the line.
I think adding a fishing rod system with randomization / surprise elements would really be worth the Devs man hours by adding depth and another time sink to the game. Also there could be different dishes per fish, to motivate chasing species : "Fried Perch", "Stewed Pike", etc.

Otherwise perhaps boats could be used for fishing somehow? (we need fishing poles)
