I am pretty sure I have done both fertilised unploughed and fertilised ploughed since the latest update, and it remains in that state over as many seasons as you like till the field is sown.
Why however do the villagers who work in the fields only fertilize them in the correct season? They could simply do it right after harvesting the yield, correct? I guess they are programmed to only use fertilizer in the correct Season though. For us however, if we wish to do our own field work, we can do it in fall and wait till the right Season to put the seeds in. Good to know!
Personally, I'd prefer a batter system of assigning workers to farm work, perhaps giving option buttons for crop workers for when they have finished their essential work for that season, choosing whether they should then prepare for the following season or whether they should do work in the barn. It probably makes sense to keep a role of dedicated barn worker ("farmer" seems such a misleading term), otherwise we might risk running out of animal feed, fertiliser or some other thing they produce.
