Try to avoid wolves when you're out with your horse, or at least make sure you don't slow down or even stop, and don't try to attack the wolves while your horse is around.
Seriously, your horse is much faster than wolves could ever be and it can maintain full speed for quite a long time. Just flee immediately until you are on safe ground.
That said, losing a horse is sad. Take this invisible internet hug. At least you got those wolves for it.

Another tipp for the OP which might be helpful:
make it a habit to perform a quicksave in the game every once in a while (F5 by default setting) so you can go back to an earlier time in the game when your horse was still alive.
I usually do this at least every time when I go for a journey so if something unexpected happens I always can start over from a point when I was still alive and with all arms and legs attached to my body precisely at the spots where these usually are expected to be. ;)
- Try to jump a fence (any fence), there is some fence in the road near Hornica from Gostovia, more like near Hornica forest.
- Cross a body of water (a lake 100% chance) or water stream/river (50% chance), dangerous wild animal should stop following.
- This one is a bit risky, only attempt it if you had more practice:
Go to a rocky terrain shaping like a mountain, then fall down from a certain height, the horse will take some damage but will heal over time, while the wolf will fall down as well, and might get startled, fingers cross it will stop following you, and don't stop or look back.
- Horse can only dismount from the right or left side if not blocked by something (can be an NPC, an animal, a wall, a tree, etc..).

There is one trick that you can try that has worked for me in the past when on foot and beset by a pack of wolves (one I can handle). Before you actually die do an F5 quicksave and reload - often as not the wolves will be reset somewhere else, usually close by, but it does buy you time. Then get up the nearest rocky outcrop and shoot them as they come up (they seem to have trouble getting up steep rocks).
We really need to be able to use weapons from horseback. As it stands you cannot even take a drink from your water bottle without first dismounting!
- from Gostovia, go west following the road by the river/lake until the bridge to Rolnica. (do not go to Denica)
- head south following the road by the river/lake until the first bridge to Lesnica. (again, do not go to Denica)
- south again, leave the road and follow the river until you see a meadow on your left after the second bridge. Then you can catch the road again (there is a wolf spawn near the roads junction in the woods on your left, that's why you must take the river)
- once at Jezerica, go east through the mountains (the road starts at the right of the food storage). Each time you see a roads junction, turn right.
- welcome at Hornica!
You will see deers, foxes, one or two buffaloes and that's it. BUT this is a little (who am I kidding...) way longer than the direct road heading south from Gostovia
