The hunt animation is only for ambience. That´s nothing have to do with the real production. No worry, that there aren´t enough wild life, all of your workers except the fieldworkers and craftmen produce out of air at work time.
Knives is what he needs. Did you set up the production in the menu of the hunting lodge?

And do you have set the settings in the management tab to say him what he should do?
The animation of your workers have nothing to do with the real production (except your fieldworkers).

1) Hunter is satified? Home, food, drinks, firewood
2) Just knifes in a Resource-Storage somewhere on the map?
3) Food-Storage builded?
4) Production for Hunter-Lodge set in Management?
Then it should work now. Your Hunter will take the knifes from there by magic, even all across the map. He will also put fur and leather in your RS, and the meat in the FS. Just by the same magic. And he will produce, even if he graphically does nothing.
