Problem with King's Challenge
I accepted a king's challenge titled "Let's make it better" to collect 150 logs, 90 stone, and 60 iron. The description says I can store the resources in my storage and then talk to the herald to complete the quest.

I've collected all the resources, but the problem that I have encountered is that the resource storage chest has a maximum of 500 kg's of storage, which is not enough to hold all of the resources required.

Any suggestions on how to complete this challenge?

The capacity and contents of all the chests in your resource storage buildings is combined. So, if you build a second resource storage, it is like you have a single chest with a capacity of 1000 kg, which you can access from either building. Or, if you build a resource storage II, it would be like you had a single chest with a capacity of 1500 kg, which you can access from either building.

honestly the challenges probably shouldnt start quite so early, a lot of people have been complaining about stuff like this where it is basically impossible to complete, and there is no way to know the requirements before accepting... when they have come up for me, they are all super easy at my point in game... so some sort of power creep or something

I found a solution to my problem. First I tried putting some of the resources into my food storage, which the herald didn't acknowledge at first, but then I spoke to him again with some logs in my inventory (and the rest of the resources in the resource storage + food storage) and was able to turn in the quest.

these "kings quests" are so unbalanced. the ones i got are almost impossible at the times they arrive so silly, again adding a " feature " thats a text based dialogue with ridiculous missions for almost no reward. why add this and not fix bugs? well because kiddies were crying for content and now look a month or two later they are all dropping off this game because of bugs like i said.

or, and bare with me this may get complicated, they are working based on the road map they published and the bugs you mention have been being addressed as they go but quite obviously are not simple issues or they wouldnt have been issues to start

and if you have been playing for longer than a couple of days the challenges are really not that difficult. but, get this, they are called challenges, not easies

You should be able to hand over what you have in your inventory when you talk with the herald.

So you can like offload things from there as well and not all the stuff at the same time.

You need to have all your resources first, before you can talk to the herald again. If they are regular resources they can be either in your inventory or the resource storage or some in your inventory and some in your resource storage, as long as the total sum is what he asks for.

The herald should show up after completing the chapter quests. At this point, most people already have enough storage space. But it's an interesting problem worth considering.

For food related quest, personally I do not recommend to store the food for quest to be store in the Food Storage in case the inhabitant will eat it, it is better to bring it in one go.

I've tried to reload to test and to store some portion in my FS and I bring some in my inventory, then I tried to deliver to the Herald, there is no option for the delivery or confirming that we can deliver it in portion or pieces.

So I would assume you have to deliver it in one go, so for resources it is best to be store in the RS (since it would be too heavy to carry), and for food related quest to bring it in the inventory in one go to the Herald.

I have to ask the dev responsible for the challenges about those asking for food.

I've tested it and he takes food from the food storage as well.

The King's Challenges are not something I would bother with until I have a fully functioning village up and running. They're designed to be hard and give you a good chunk of reputation as a reward (150-300 reputation is nothing to sneeze at, when you're trying to recruit villagers). But they can bankrupt you, if you're not careful. That's the reason they're challenges, as opposed to storyline quests. You don't have to do them, and shouldn't in the early game.
