Logs and firewood collection
I have 3 woodsheds. I set to 100% logs, 1 set to 100% firewood and the other 50/50 of both and I barely get enough firewood to stock the village. I am having to make some myself every day. I have them all deep in the woods surrounded by trees in different areas and the lumberjacks are 2@3 and 1@4 extraction skill. My resource shed still has over 200kg spare capacity as well.
This is new since the patch as before I was swamped in logs and firewood with only 2 sheds.

This is a new game I have started since the patch as well.

Start with your wood demand value, what is that? Don't forget to upgrade your homes with stone, it lowers wood demand.

Firewood requires logs, try this :

Woodshed 1 ... Level 4 worker ... 100% logs
Woodshed 2 and 3 ... Level 3 workers ... 50/50 log/firewood

You might need more logs to craft firewood. If you have to pad the deck (so to speak), chop some trees down and immediately convert to firewood, then check the balance every game hour (every two minutes) and ask yourself ... "did the firewood go up or down?" (in storage)

EDIT: ... I usually start with 40/60 ... 40% firewood, 60% logs.
EDIT # 2... I bull rush wood gathering in the spring, summer and autumn, then let it all get consumed during the winter with a trickle of wood to slow the winter consumption.

Having the opposite problem. I only have 1 T2 woodshed and I have too much firewood and logs. Even only have 1 person working in it.

What's your workers skill level in it? Are your houses upgraded (stone with dab)? Is your woodshed in a good location? I know people say it doesn't matter, but I placed my hunters lodge and woodshed in a deep forest and I make way more wood and meat then I know what to do with.

The demand is 7.1 hr and at the moment it says I have 322 wood. I do have wattle houses at the moment, just starting to upgrade to stone. Though I find I am struggling more than the previous game when I had wattle houses.
I check storage daily and not much is going in at all. Maybe 5 or 6 firewood goes in a day and slightly more logs.

The wattle walls would be why. Only time I had wattle was for my first house. After that I built nothing but log walls until I was able to get to stone walls. Next time you restart try to avoid using wattle as much as you can, you'll burn through wood like crazy (yes I meant the pun lol).

lol. Yeah I understand how much the wattle walls use up the wood but honestly I've had wattle walled houses in my previous game and I never struggled so much as I do now. But yeah I am starting to upgrade them to stone because I can't cope with the demand now.

all my houses are up graded to stone and dab, and lime, my lumberjacks are all level 4/5

it is feasable in the start of the game to build even log walled houses. i prefer to use a hybrid combination of stone and log bc i prefer the look of log but noticed even with 1-2 stone walls the rest log brings a decent reduction in firewood demand. theres not any real good reason to ever build any of housing unit with wattle. the woodshed is pretty easy to unlock which allows planks for the roofs. this seems to make a signifigant impact in wood demand as well.

I like to start with wattle purely for story reasons, it's nice when I can finally grow my settlement to afford the better walls. Plus I have been trying to stretch things out so the son and possibly future heir can have something to do.

I totally get the roleplay/immursiveness reason for building certain ways. i kinda wish there was an even lesser shelter we could build, like temporary shelter over night while out hunting. lean to's and hovels would be fun.
Hopefully, much more building content will be added over the next year, which will give our heir something to do. the possibilities are endless from stick house all the way up to castles and keeps. Notice the windmill in the background image behind these posts? and the tower far on the horizon that looks like a possible castle? this gives me optimistic hope for the future.

I would absolutely love some new building options as well. I mean 5 or 10 generations down the road I am hoping there is some progression if they plan to take it that far.

I have a problem with my woodcutter too. When I hired him he was very effective, I got over 100 logs in no time but the last 3 seasons it came to a stand still, when he did not produce anything. I tried to reassign him to see if that would help, but it did not. I have to cut wood every day to meet the demand of firewoods.
