Depending how long you make your graphics card work very hard, especially in a very long intense gameplay for high settings, it demands more VRAM and computing power. Once I know the model, I might based it on prediction. But I can't pin point exactly why (assuming everything is good under the settings for the graphics card and the game setting). Because it depends on your graphics card history it self, has it been worn out, etc.. Just trying to help.
EDIT: Correction he is using the RTX 2070 Super card
Try download the latest 2080 driver, and optimized it under GeForce Experience, from his (your) end. Other than that can't do anything else that I can think of, other than I maybe, just maybe not optimized for the card in full potential. But that's just unlikely, otherwise plenty of people will have the same and similar issue.
2x2, and use a hoe to make it just to show the soil, then destroy it.
The grass grow in an instant.
My GPU: 1080 Ti.
Maybe it would help? I guess the location where he plant in the map, a screenshot perhaps too.

Patch v0.1.1.2
The size of plants data in the save file has been reduced.
Try it in a new game? See if it makes the same problem?
Using the same GPU and settings.
Nice job and I think your info will help.
