Change field and crop management every season ?
How do you handle field and crop management ?
Do you change it every season ? Like carrottes in winter and other stuff in spring and summer ?
Or do you just build bigger fields and set them once for a whole year ?
Is it even possible to change the settings without destroying the actual field state (like fertilised) ?

I just did big orchards to generate income through the products you can make from the fruits because I did not want to worry about changing the fields every season. so I just aim toward crops you plant once and are done with planting. Trees work great for this.

Fields cost taxes, even if unused. So economically there is no reason not to change your seeds.
The mayor point (especially in early game) you've got to consider is if you've got the fertilizer to till your fields twice or even a third time in a year.

I've got a fixed rotation containing 4 fields:

Field1 | 30 patterns | spring: oat | autumn: rye
Field2 | 30 patterns | spring: onions | summer: cabbage | autumn: rye
Field3 | 30 patterns | spring: carrots | autumn: rye
Field4 | 256 patterns | spring: flax | autumn: rye

Field 1 only for animal feed (3 piggys -> fertilizer)
flax for income after further processing
cabbage to eat raw, onions and carrots for cooking
the huge rye crop for flour (cooking or selling)

My village with nearly 25 residents is flourishing.

Important is to change the seeds in the management tab only in the season you want them to be sowed, or you can see your farmers deleting your growing crops.
But a fertilized field can't be destroyed, you can only lose your sowing.

At the beginning, i was changing every seasons. But now, i do different field for each crop. Way better like that. I don't need to handle it anymore and i've the same amount of crops each year.

And then, i know just by looking at the field than my farmers are working on Flax, Weat, etc ... It also avoid me to do mistake when setting crops.

Rotation
F1 6x12
Flax – Spring – Summer
Cabbage - Summer - Autumn - Pottage

F2 6x12
Oat - Spring - Autumn
Rye - Autumn - Spring - Animal food

F3 16x16
Wheat – Autumn – Summer - Flour

This is fairly easy.
I set the fields north and south, then placed the barn on the north side.

I have ten 10x10 fields that are each permanently planted. One field has beetroot/onions/carrots. Then I have 5 fields for Flax and one each for Cabbage, Oats, Rye and Wheat.

You can also add custom labels to the fields now, it makes the seasonal rotation super easy.
i.e. Field 1 (insert crop names here)

@OP Yes, I rotate seasonally. I harvest whatever is ready first, then take a minute to check and change the empty fields to whatever the label says is next.

you need a tractor.

what does having all the different crops do?
do you get mood increase or is it a because I can thing?

Also, you could do the same thing, with 4 16x16s 2 for flax and the other 2 for the rest of the stuff.

Flax for linen thread and making money. Cabbage for eating and turning leftovers into rot. Oats and Rye for Animal Feed, Wheat for flour. Beetroot/onions/carrots in case I some day try making higher end dishes but in the meantime it mainly goes to rot.

I could have made 16x16 fields but I like 10x10 because they fit into smaller areas and are a nice round number...

I can't be bothered, so I just set one crop per field. It would be nice to have seasonal ceops, and assignment for buildings like the Herbalist's Hut.

Largest field
F1, Oat/Rye

Smaller fields
F2, Onion/Cabbage, clear over winter
F3, flax/Cabbage, clear over winter
F4, Carrot/Rye

One 10x3 field for each seed type for me, set and forget. May not be the most efficient but no big deal to me. I add another 10x3 for flax

So far .. 13 fields 16 x 16 each ...all close to barn L 3 ... 8 workers farmers level 7 to 10.
i always plant cabbage and flax .. the rest depending on season ..and keep growing , my challenge is to see how far i can grow my farming communities ... based on historical farming and current gaming limitations .

Very interesting, do you have the farm in one place or in several places spread out on the map?
What do you mainly produce with the flax, are you making full sets of clothes or just a few specific items?
