This is kind of nice to know, I'm just tired of women not really being represented in the craft/survival/open world/etc. type of games.
Or Lara from Tomb Raider as a male Larry.
So to clarify - all the people who list off games which only include a female protagonist or rather have set protagonists, the reason there have never been requests to implement male characters in such games is because a game is defined by its genre - if the genre doesn't call for it then there is no problem. For example, Tomb Raider is about a female adventurer thus no need for anyone to complain there is only a female as an option to play. Medieval dynasty is an open world rpg life simulator immersion game - so choice on how to play and who to play as is a very important factor.

If you did read the store page then you would have read this:
"In Medieval Dynasty, you take on the role of a young man who has fled from war and wants to take his fate into his own hands. "
It literally tells you that you take on the role of a young man. How can you then seriously come into the game and expect there to be a choice to play as a female?
You can throw up any red herring you like to make your argument but they all fall flat because the game is in your face about who the main character is.
If you only want to play games as a female then why would you pick up a game that specifically tells you that ".....you take on the role of a young man....."?
I don't care what sex you are or identify as. It's true I literally don't care. I was male at birth and I am and always will be male. I am however comfortable in my own skin and more than happy to play any type of character in any type of game I enjoy. That gives me a much greater selection of games to choose from than those of you (female or male) who can only play games that allow them to play as their gender.
What red herrings have you identified?
Above all else the developers want the game to be successful - there is no question that out there, some female gamers would like to play the game for its setting, features, mechanics and so on. The game defines itself as a medieval rpg simulator with an emphasis on immersion, the implementation of a set protagonist is contrary to what you'd expect; and my comment before yours simply highlights this. So if there is a market for it, and the changes involved, especially for a game lacking protagonist voice acting, it's within reason to request.
The developers encourage the community to voice their opinions and wants, thereby anyone requesting a female player to play as, or character customisation is warranted in this instance. In this discussion alone we see a number of people telling the developers they will give them their money if they implement this feature - no brainer.

Remember the game tells you this up front. This game is about a young man in medieval times. There is no grey area here thus there is no need for anyone to complain that there is only a male option to play.
Anyway I've had my say I'll let you all continue to debate why there is no female protagonist in a game about a young male.

This game is obviously a survival crafting genre, it says "young man" only because in current state the game hath no female protag in it. It would most likely to be changed if they add female PC.
And even if the words suggest male, doesn't mean there can't be female PCs, for example Kingdom Come deliverance also says a man but there's one female playable character in it. Another example is you can play as a "Queen" in Crusader "Kings"
