Harvesting Carrots?

Will it say when they are ready to harvest the next season and what do you need to harvest them?

There is a sythe you can craft or buy from first village. It states under the description it is used to harvest crops. Maybe that?

When it's time to harvest your carrots, you will see them poking above the ground. If you go up to one of the "tiles" with carrots, you'll have the option to harvest them by holding "E."

Onions, carrots, cabbages (and probably beetroots) can be harvested by hand once they are grown. Just get close enough and you'll see the "press E to harvest" prompt. I think you only need the scythe for wheat, rye and flax. I think you also need a barn built in order to process the wheat and rye before you can cook with it. But I haven't gotten that far yet.

You are correct on all accounts. Btw, when you get the barn you have to go to the straw patch thing in one corner to thresh rye/wheat/flax, then you'll get their grains and some straw. You can turn the rye/wheat grain into flour, cook the grain in your house's cauldron for food, or save the grain for planting. The flax grain is for planting, but also when you thresh flax you get flax stalk. You use the tailor/sewing building to weave flax stalk into linen thread, and wool into wool thread, and use the work table there to make clothes out of leather, straw, linen cloth, wool cloth, and thread.
