It's possible the Brujah playthrough already has you being strong (a single dot of potence with merely average mortal strength wasn't terribly awe inspiring), and so doesn't require you to choose to use it....it's always on.
V5 changed many of the disciplines. The 3 physical ones of Potence, Celerity and Fortitude aren't just flat attribute boosts anymore. They now have specific powers associated with them.
That comic book style ground pound that Potence has in Bloodlines 2? Yeah, that's actually something you can do in the V5 pen and paper version now.
Want to move so fast that you effectively manage to teleport hundreds of feet away? Yup, that's something the new Celerity allows for.
Fortitude isn't limited to just physical defense now, either. You can use it to guard your mind against the mental / emotional powers wielded by other vampires.
